Story/History of recipe
Muruku is one of the famous Indian snacks originally from Tamil Nadu. Though a basic type of muruku is made with two main ingredients which is rice flour and urad dal it is an interesting dish that can have many varieties by adding in different ingredients. One of such is ragi muruku. Both ragi and muruku have traditional values in South India.

Ingredients
The following are the ingredients needed to prepare a quantity of around ten ragi muruku,
- Ragi flour - 1 cup
- Rice flour - 1/2 cup
Before starting the preparation, it is optional to dry roast ragi flour and rice flour separately in low flame only until the aroma kicks in.
- Roasted urad dal flour - 1/4 cup
- Cumin seeds or white sesame seeds or both as per your preference - 1/2 teaspoon (each)
- Chilli powder - 1/2 teaspoon
- Asafoetida/Hing - 1 pinch
- Salt to taste
- Butter or ghee - 2 teaspoon
- Water to mix the dough
- Oil for frying.
Preparation Steps
- Take a large bowl, add the three flours - ragi, rice and urad dal, cumin seeds or sesame seeds, chilli powder, asafoetida, salt and butter. Mix them well.
- Now add water little by little and knead the contents into a smooth dough.
- Once the smooth dough is ready take the muruku mould, grease them with ghee and fill it with the dough.
- Take a pan, add enough oil to deep fry and let it heat at a medium flame.
- Once the oil is hot, squeeze the dough in the twisted round shape of muruku into the pan. For beginners, to get a better shape you can squeeze the dough on a plate or spatula first and then drop it into the oil.
- While it is frying, flip the ragi murruku so it is evenly cooked.
- As the ragi is naturally brown in colour be cautious while you deep fry and make sure you do not over/under fry it.
- Once the sizzling sound and bubbles stop you can take it out and transfer it to a plate. Hot and crispy ragi murruku is now ready to eat.
