Other similar Khaja variations are Kakinada Khaja and Flower Khaja.
In the mid-16th-century many pastry recipes began famous in European countries.
Frybread was the first fried pastry it originated from the southwestern United States.
Every continent worldwide except Antarctica has grown the wheat crop.
A similar variation of Khaja from Nepal is considered as an important sweet to celebrate Chhat puja.
It is said that the layered and sugar-glazed look of Madatha Khaja is similar to another popular pastry of India, Badusha.

Story/History of recipe

Khaja in general is a fried pastry of India popular in places like Bihar, Andhra, Uttar Pradesh, Odisha and a few parts of Nepal. Madatha Khaja is a special sweet from Andhra Pradesh. It is originally from a village called Tapeswaram, situated near Kakinada, a city of Andhra. Hence, this sweet is also known as Tapeswaram Khaja. Traditionally, Khajas are prepared by frying the dough in ghee and later dipping the fried pieces in sugar syrup. Unlike other variations of Khaja, Madatha Khaja has a layered texture that can quickly absorb in the sugar syrup when it is soaked in. This amazing sweet is perfect to prepare for any festival like Diwali and Christmas.

Ingredients

The following are the ingredients needed to prepare Madatha Khaja,

Maida or Wheat flour - 1 cup
Sugar - 1 ½ cup
Cardamom powder - 1 teaspoon
Lemon juice - 1 teaspoon
Ghee - 2 tablespoons
Water - ½ cup
Oil as required for frying.

Preparation Steps

In a mixing bowl, add one cup of maida and a quarter cup of water, two tablespoons of ghee and mix well.
Knead it into a soft dough and add a little more water if required.
Add a teaspoon of oil, cover it and let it rest for a few minutes.
In a pan, add sugar and water as required to immerse the sugar.
Keep stirring to prepare the sugar syrup.
Add cardamom powder and lemon juice, wait until it reaches one string consistency and switch off the flame.
On a flat surface or counter-top flatten the dough into a thin sheet with a rolling pin after dusting it with flour.
Cut the sides to form a square-shaped sheet.
Start rolling into thin rolls and cut them into small squares. These thin rolls will give the layers.
Slightly press in the middle of the squares and keep it aside.
Heat a wide-bottomed pan with oil for deep fry.
Fry the pieces until they float up and turn a light brown color.
Strain the oil and place it on a tissue cloth.
Drop these fried pieces in the sugar syrup.
Make sure that the sugar syrup is covered in the pieces and let it soak for a couple of minutes.
Remove and transfer it to a plate and it is ready to eat.

I am not at home and I received a message from the delivery team that it will be delivered today, what should I do?

The best thing you can do is to ask your security or neighbor to collect it and keep it with them and you can later collect it from them. If you don’t respond the product will be sent back to us and you may have to still bear all the shipping costs to get it delivered.

What is the minimum order value?

There is no minimum or maximum order value, when your order is worth Rs 2000 and more you would get a discount and you can avail it any time including the current order.you can proceed ordering as much quantity and varieties you can. For corporate orders you are requested to do an online transfer to the bank account instead of paying online on the website.

Can I avail discount?

Yes, we may have seasonal deals and discounts and its not assured always, but then you can always avail a discount when your order is worth Rs. 2000 and more, you can ask for it over the chat or write to us or call directly to the available number on the website.

Do you serve custom orders?

Yes, we serve custom orders for occasions like Srimantham (Baby shower), Oni function, festivals, small events, marriages, naming ceremonies, etc.

Can I get a custom packaging/ gift packaging?

Yes, you can. You have to specifically mention it during your purchase, sometimes it would be chargeable based on the purchase value, product, event/occasions etc.

Can we order bulk for the functions?

Yes, you can order at least 7 days in advance. So we make sure it's delivered on time to your door. We serve at least 200+ function/bulk orders every month, the most common functions we serve are the baby shower (Srimantham), Oni function, Naming ceremony etc.
