Story/History of recipe

Khaja in general is a fried pastry of India popular in places like Bihar, Andhra, Uttar Pradesh, Odisha and a few parts of Nepal. Madatha Khaja is a special sweet from Andhra Pradesh. It is originally from a village called Tapeswaram, situated near Kakinada, a city of Andhra. Hence, this sweet is also known as Tapeswaram Khaja. Traditionally, Khajas are prepared by frying the dough in ghee and later dipping the fried pieces in sugar syrup. Unlike other variations of Khaja, Madatha Khaja has a layered texture that can quickly absorb in the sugar syrup when it is soaked in. This amazing sweet is perfect to prepare for any festival like Diwali and Christmas.

    Ingredients

    The following are the ingredients needed to prepare Madatha Khaja,

    • Maida or Wheat flour - 1 cup
    • Sugar - 1 ½ cup 
    • Cardamom powder - 1 teaspoon
    • Lemon juice - 1 teaspoon
    • Ghee - 2 tablespoons
    • Water - ½ cup
    • Oil as required for frying.

    Preparation Steps

    1. In a mixing bowl, add one cup of maida and a quarter cup of water, two tablespoons of ghee and mix well. 
    2. Knead it into a soft dough and add a little more water if required.
    3. Add a teaspoon of oil, cover it and let it rest for a few minutes.
    4. In a pan, add sugar and water as required to immerse the sugar.
    5. Keep stirring to prepare the sugar syrup.
    6. Add cardamom powder and lemon juice, wait until it reaches one string consistency and switch off the flame.
    7. On a flat surface or counter-top flatten the dough into a thin sheet with a rolling pin after dusting it with flour.
    8. Cut the sides to form a square-shaped sheet.
    9. Start rolling into thin rolls and cut them into small squares. These thin rolls will give the layers.
    10. Slightly press in the middle of the squares and keep it aside.
    11. Heat a wide-bottomed pan with oil for deep fry. 
    12. Fry the pieces until they float up and turn a light brown color.
    13. Strain the oil and place it on a tissue cloth. 
    14. Drop these fried pieces in the sugar syrup. 
    15. Make sure that the sugar syrup is covered in the pieces and let it soak for a couple of minutes.
    16. Remove and transfer it to a plate and it is ready to eat.
