Sattur, a town in Virudhunagar district, Tamil Nadu is famous for this Kara Sev. The word "Kara" means spicy in Tamil. Apart from any regular Sev this is known for its right amount of spiciness that is enhanced by freshly ground red chillies and a tinge of garlic. It has a busy market in Tamil Nadu and is quite famous globally even on non festival seasons as it is regularly purchased for its quality and for being the common household snack.

Ingredients
The following are the ingredients needed to prepare Kara sev,
- Gram flour (Kadalai maavu) - 2 cups
- Rice flour - 4 tablespoons
- Cumin seeds - 1/2 teaspoon
- Chilli powder - 1 teaspoon or more as preferred.
- Garlic paste - 2 teaspoon
- Asafoetida/Hing - 1/2 teaspoon
- Cooking soda - a pinch (optional)
- Butter/ghee/hot oil - 1 teaspoon
- Salt to taste
- Water for dough
- Oil for deep fry
Preparation Steps
To prepare dough:
- Take a large bowl add gram flour, rice flour, chilli powder, cumin seeds, garlic paste, salt, asafoetida and butter. Give it a mix.
- Add water little by little and knead the contents into a smooth and soft dough.
To prepare Kara sev:
- In a heavy bottomed pan, add oil as required for deep fry and let it heat at high flame.
- Take the murukku maker/mould, grease it with oil and fill in the prepared dough.
- If the oil is hot enough, lower the flame and start squeezing the dough directly into the pan.
- You can either cut the pieces as you squeeze or squeeze them completely in big rounds and break it into pieces once it is done.
- On the other hand, you can also use the specific 'Kara Sev Kattai' or large ladle with bigger holes to prepare the right size by pressing and rubbing the dough on top of it.
- Gently stir them so that it is evenly fried.
- Once the bubbles have stopped take them out and place it on a strainer or tissue paper.
- Repeat the process for remaining dough.
- Kara sev stored in an airtight container can stay crisp for over a week. It is said that it gets more crispy at room temperature compared to when it is piping hot.
