Ingredients Needed For Kaju Katli Are:- 

  1. Sugar -¾ cup
  2. Cashews – 1 ½ cup
  3. Water – as required
  4. Ghee – 3 tablespoons
  5. Elaichi powder – 1 teaspoon
  6. Silver vark (optional)

Procedure For Making Kaju Katli:-

  1. In a mixer take cashews and grind to a powder
  2. Now switch on the stove, put a pan and take ¾ sugar along with water as required.
  3. Keep the flame low and keep on stirring 
  4. Stir the sugar syrup till it forms one string consistency
  5. Now add cashews powder and stir well
  6. Remember to keep the flame on low all the time
  7. Now add elaichi powder and mix well
  8. Keep stirring continuously until it forms the dough
  9. Now add ghee and switch off the flame
  10. Continue to mix till the ghee melts completely
  11. Now  grease butter paper with ghee and transfer the dough into  it
  12. Wait till you are able to handle the heat
  13. Now grease your hands with ghee and knead the dough for 1 minute
  14. Once you get smooth dough cover with butter paper and take a plate to press to form ulna form layer
  15. Then roll the dough using rolling piping, adjusting the thickness according to your choice
  16. Cut the edges so that you can get perfect diamond shapes
  17. Now cut the dough into diamond shapes or any shape you want
  18. Now you can also decorate with silver vark
  19. Finally, Kaju katli was ready to serve.
