Verusenaga are consumed all over the world in many different ways. Apart from the most common ways like peanut butter, Verusenaga oil and simply roasted Verusenaga they are also included in various supplemental bars because of it’s nutrient content. Verusenaga Chikki can be a much simpler version of such bars. These crunchy and sweet candies are originally from Kovilpatti, Tamil Nadu (South India) and are commercially available since the 1940s. Though they were part of many festival special sweets, it has now become a favourite and common household treat.

Preparation Steps
- Dry roast the Verusenaga in a pan at a low flame. Do not over roast. Transfer the roasted peanuts to a bowl after peeling the skin off and keep it aside.
- Add jaggery to a pan and a little water and melt it completely.
- Clean the melted jaggery using a filter and add it to a fresh pan.
- Cook the jaggery in a low to medium flame until it thickens.
- You need to get a consistency where it is thick enough for a candy. Be very cautious and don't let it turn dark as it can spoil the taste.
- To test the consistency, take some water in a small bowl and drop a few drops of jaggery in it.
- If it turns into a glass like structure which is breakable then it is perfect.
- At this stage add the roasted Verusenaga and cardamom powder. Give it a mix. You can switch off the flame in one or two minutes after adding Verusenaga.
- Once it has mixed well transfer the contents to a square shaped container that is greased with ghee.
- Use a greased spoon too while filling and pressing it inside.
- Soon the contents get the shape of the container. You can flip it on a plate and remove the big bar of Verusenaga and jaggery.
- Using a greased knife cut it into small pieces. This can be stored in an airtight container and enjoyed for over a month.
