Pavakkai chips which is also known as Karela chips in North India is a quick evening snack that is prepared by frying the slices of bitter gourd that is covered with a spicy paste of flour and Indian spices. It is prepared easily anytime and with ingredients like garam masala or chaat masala the taste enhances and reduces the bitterness.

    Ingredients

    The following are the ingredients needed for preparing Pavakkai Chips,

    • Bitter gourd - 2 nos. long sized
    • Rice flour - 2 tablespoons 
    • Gram flour - 2 tablespoons
    • Turmeric powder - 1/4 teaspoon
    • Red chilli powder - 2 teaspoon or as preferred 
    • Salt as required
    • Water required
    • Oil for frying.

    Preparation Steps

    1. Cut bitter gourd into thin circle slices and remove the center seed part.
    2. Add rice flour and gram flour and gently mix it by sprinkling water. Do not pour in too much water and sprinkle only enough water to slightly coat the bitter gourd slices with flour.
    3. Add turmeric powder, red chilly powder, salt and mix well.
    4. Heat a pan with oil at high flame.
    5. If the oil is heated add bitter gourd slices one by one and let it fry.
    6. Once it turns brown, gently flip to fry the other side.
    7. When it is fried well transfer it to a strainer or tissue paper to remove excess oil.
