Story/History of recipe
Kamarkat is one of the traditional South Indian candies that is originally from Madurai and a few places around it. It was popular among kids and adults for many generations up until the early 90s in South India. This one along with other candies were used to be available in small shops and especially in handcarts in the evening. It was also special on traditional occasions like Kovil Thiruvizha and other festivals. Though it had lost its spot in the urban shops a decade or so ago, it didn't lose its popularity. In the past few years it has slowly started acquiring the markets again along with other similar traditional snacks to reach back to its fans. It has also gained many new customers.

Ingredients
The following are the ingredients needed to prepare around 15- 20 balls of Kamarkat
- Jaggery - 1 cup (crushed into small pieces)
- Coconut - 1 1/2 cup freshly grated and coarsely grinded without water.
- Water - 1/4 cup for melting jaggery.
- Ghee - 2 tablespoons
- Cardamom powder and dry ginger powder - a pinch (optional)
STEPS FOR PREPARATION
- Take a pan and pour 1/4 cup or less water.
- At a low flame, while it is boiling add jaggery.
- Let the jaggery melt. Once it has melted transfer this syrup to a fresh heavy bottomed pan using a filter.
- Add coconut to it and keep stirring.
- Start with high flame then you can slowly reduce it.
- Keep stirring without a pause until it has mixed well
- It has to become a little thick and non sticky.
- You can add one teaspoon of ghee if you prefer.
- Once it is done transfer it to a greased plate.
- While it is hot enough to touch, grease your palm with ghee, take a small amount and start rolling them tightly into small balls.
- Once the balls are done keep it aside on a plate for a few minutes before you store it in an airtight container. So that it won't stick to each other.
- These Kamarkats can be enjoyed for over a week.
Preparation Steps
- Take a large bowl, add the three flours - ragi, rice and urad dal, cumin seeds or sesame seeds, chilli powder, asafoetida, salt and butter. Mix them well.
- Now add water little by little and knead the contents into a smooth dough.
- Once the smooth dough is ready take the muruku mould, grease them with ghee and fill it with the dough.
- Take a pan, add enough oil to deep fry and let it heat at a medium flame.
- Once the oil is hot, squeeze the dough in the twisted round shape of muruku into the pan. For beginners, to get a better shape you can squeeze the dough on a plate or spatula first and then drop it into the oil.
- While it is frying, flip the ragi murruku so it is evenly cooked.
- As the ragi is naturally brown in colour be cautious while you deep fry and make sure you do not over/under fry it.
- Once the sizzling sound and bubbles stop you can take it out and transfer it to a plate. Hot and crispy ragi murruku is now ready to eat.
