INGREDIENTS

The following are the ingredients needed to prepare Pandu mirapakaya pickle,

  • Fresh Green chillies
  • Mustard seeds
  • Fenugreek seeds
  • Cumin seeds
  • Fennel seeds
  • Vinegar
  • Mango powder
  • Turmeric powder
  • Asafoetida /Hing
  • Salt as required
  • Cold pressed Oil

PREPARATION STEPS

  1. Wash and clean the Green Chillies and dry them using a white cloth.
  2. Using a dry knife chop and remove the head tip of the Green Chillies. Slit half one side of each Green chilli and scrape out the seed part. After deseeding keep it aside.
  3. Heat a pan and dry roast the spices, such as mustard seeds, fenugreek seeds, cumin seeds, and fennel seeds. Transfer them to a dry blender jar and grind them into a coarse powder.
  4. In a bowl add the prepared powder, turmeric powder, mango powder, asafoetida, and salt. Mix well.
  5. Add vinegar or alternatively, oil can also be used. Once again mix them well.
  6. Stuff this masala in the half-cut Green Chillies and place it into a dry jar.
  7. If preferred, any excess masala can also be added to the jar and poured into a cup or less heated oil.
  8. Cover the jar tightly with a lid and give it a shake.
  9. Place this jar outside and let it rest for about 5-7 days under sunlight.
  10. Make sure to shake it every time before placing it outside.
  11. After 7 days, it will be ready and perfect to serve. Use a clean and dry spoon while serving.
