Preparing Ellu Mittai involves a few simple steps that anyone can follow, making it an excellent treat for festivals, celebrations, or just when you want to satisfy your sweet tooth. To start, gather your ingredients: white sesame seeds, jaggery (or sugar), and a few optional spices for added flavor. The first step in the Ellu Mittai recipe preparation is to lightly roast the sesame seeds on low heat until they turn golden brown and release their nutty aroma. Be sure to keep stirring to prevent burning.
Once the sesame seeds are ready, the next important step in the Ellu Mittai recipe preparation steps is to prepare the jaggery syrup. In a separate pan, melt the jaggery with a little water, stirring continuously until it reaches a soft ball consistency when dropped in cold water. This is crucial for the perfect texture of the sweet. Once the syrup is ready, mix in the roasted sesame seeds quickly to ensure they are evenly coated before the mixture cools down. After thoroughly mixing, you can shape the mixture into small balls or flatten it out to cut into desired shapes once it cools.
